Give Bordeaux three days on foot and a fourth for the vineyards. The UNESCO core between the Grand Théâtre, the cathedral and the quays is walkable end to end, so the trams are for the outer stops: Bacalan for the Cité du Vin and the submarine base, the right bank for Darwin. Save one full day for Saint-Émilion or the Arcachon basin, both reachable by train from Saint-Jean without a car.
Bordeaux spent two centuries behind soot and then spent twenty years cleaning itself off. The result is the largest urban area on the UNESCO list, a limestone city that reads as one continuous eighteenth-century facade. What makes it work as a short trip is the scale: you can cross the historic centre in half an hour.
A museum about wine everywhere rather than a Bordeaux showroom, which is what saves it. The permanent route runs on a headset that reacts to where you stand, moving between growing regions, trade routes and a smell room that gets the most attention. The building, a decanter swirl in gold aluminium, is the other half of the visit.
The single view that sells the city. Gabriel built the square in the 1730s as a royal set piece facing the river, and in 2006 Michel Corajoud laid a two-centimetre film of water across the granite in front of it. The pool alternates between mirror, mist and empty stone, and the reflection only works from the outer edge. Come after dark.
Four flooded pens of a wartime submarine base, concrete roof eleven metres thick, now the largest digital art centre in the world. Projections climb the walls and repeat in the water, and the effect owes as much to the bunker as to the programme. Shows change, so check what is running. Nothing else here uses a room this brutal for something this soft.
The city explaining itself, from prehistory to the present, and one of the largest history museums in France. The rooms that matter most cover the eighteenth century, where the museum sets out plainly how Bordeaux grew rich on the Atlantic slave trade. Few French cities display that history this directly. Give it two hours and read the labels.
The cathedral of Saint-André is free to walk into and worth twenty minutes for the height of the nave. The reason to stop is the tower beside it, built in the fifteenth century and deliberately kept separate so the bells would not shake the church. It is 231 steps and there is no lift. The reward is the whole limestone grid laid out below.
Bordeaux held its first market here in 1749 and covered it in 1878, and the halls still do the city's actual shopping rather than a curated version. Oyster growers, fishmongers, cheese counters and North African and Portuguese grocers share the aisles. The local move is oysters and a glass of dry white at a fish counter on a Saturday morning, standing up.
Victor Louis finished it in 1780 and it has set the tone for the city ever since: twelve Corinthian columns across the front, muses along the roofline, and a staircase inside that Garnier is said to have studied before building his own in Paris. It is a working house, so the honest way to see the auditorium is a ticket or a guided visit.
A nineteenth-century barracks on the right bank, empty since 2005 and rebuilt from 2011 as the city's alternative quarter. Inside one set of sheds: an organic grocery and canteen, a coffee roaster, a brewery, co-working floors, a skatepark and some of the best street art in France. Fifteen minutes over the Pont de Pierre from the centre.
Founded in 1801 and still hung in two wings either side of the town hall garden, with painting and sculpture from the fifteenth century to the twentieth. A mid-sized collection that rewards an unhurried hour: Flemish and Italian rooms on one side, nineteenth-century Bordeaux on the other, and a garden between them most visitors walk past.
The flamboyant Gothic basilica anchors the most mixed quarter in the city, and its bell tower stands apart from the church at 114 metres, the tallest in southern France. The square around it runs a street market and second-hand stalls that draw a very different crowd from the Golden Triangle ten minutes north. Come for the contrast as much as the building.
